Blackened Salmon
(serves 4)
from the former Paradiso Trattoria in Monterey, California
Ingredients:
-- 4   8-oz. salmon fillets, cleaned and boned
-- 1/2 cup Pisto's Sensational Seasoning, or a combination of garlic,
   onions, paprika, salt, cayenne pepper, and other herbs and spices
-- 1/4 cup butter, melted
Preparation:
Pre-heat cast iron stove-top grill or skillet until smoking hot.  Using two pie tins, pour butter into the first tin and seasoning mix into the second.  Coat both sides of fillets with butter, then seasoning.  Pat seasoning into fillets.  Grill for 4-6 min. on each side, or longer, depending on the thickness of each fillet.  Serve immediately.
