"D.K. Kodama's trio of Sansei restaurants (one on O'ahu, newly moved to Waikiki, and two on Maui) characterize the intersection of East and West here; he calls it "Japanese-based Pacific Rim." The sushi bar offers more than 25 options, including specialty rolls and vegetarian choices that turn tradition on its head. And, though there's a "big plate" menu, small plates really star: oxtail ravioli, foie gras nigiri sushi, Kapalua butterfry roll (panko-crusted, flash-fried seafood) and the signature calamari salad."

"Perpetual award winner D. K. Kodama, who built Kapalua's Sansei into one of Maui's most popular eateries, has become something of a local legend with his exuberant brand of sushi and fusion cooking. Although some of the flavors (sweet Thai chile sauce with cilantro, for example) may be too fussy for sushi purists, there are ample choices for a full range of palates. On the extensive menu appear Sansei's trademark, award-winning Asian rock shrimp cake, and Sansei special sushi (crab, cilantro, cucumber, and avocado with a sweet chile sauce), as well as Spam musubi (help!), and miso scallops. I favor the quieter traditional selections, such as the elegant yellowtail sushi and the Japanese miso eggplant."
