Jeff Knight, General Manager
and Former Executive Chef
Born and raised in the shadow of
Pikes Peak, it only seemed natural for Jeff Knight to prepare
the indigenous foods of Colorado. Jeff first found a love for
the culinary arts at a young age, preparing meals for the
family at home. At the age of 13, he began his first job as a
dishwasher and quickly advanced to the pantry where he began
to learn the skills to hone his craft. In the spring of 1988,
he began work for the Club Corporation of America under the
tutelage of several skilled chefs. During his apprenticeship
there, he rose to the rank of sous chef.
In the summer of 1994, Jeff
came to the Craftwood Inn and began training under two of the
Springs most skilled chefs. As the Sous Chef, he gained the
experience that would allow him to become the Executive Chef
in the fall of 2000. In his travels, Jeff has experienced
regional cuisine from Hawaii, the Caribbean, Europe, and the
Southwest, and fused it with his own knowledge to create a
unique style of Colorado cuisine.
During his first year as Executive Chef, the Craftwood Inn was
named Best Fine Dining by the Gazette Telegraph. Chef Knight
has participated in several fund raisers and culinary
competitions, and also has hosted the Winemakers Dinner at the
Craftwood Inn for the past two years. When he is not preparing
culinary delights, Jeff can be found in the mountains of
Colorado, fishing, camping, hiking, or maybe just enjoying a
glass of fine wine. |
